It is not difficult to thank G-d for the good He gives.
Noahide may thank G-d for anything in their own words, as long as it is done with devotion. He may also use various brachot from Jewish tradition to express his thanks, for example, when hearing good news.
When you recognize and acknowledge G-d as the One Source of all that a person receives, then you know that even that which you experience as painful comes from His hands. The painful, the evil is also good, although the good is hidden from our perspective.
Therefore, it is good to include in your evening prayers: Master of the universe! I hereby forgive anyone who has angered or vexed me, or sinned against me, either physically or financially, against my honor or anything else that is minus, whether accientally or intentionally, by speech or by deed.
